New Recipe! Weight Watchers Freestyle Chicken & Dumplings

Ingredients:
Rotisserie Chicken or shred about 1 LB of Chicken
2 - 32 oz Containers of Chicken Broth
2 Tsp Poultry Seasoning
1 Tsp Salt
Pepper to taste
2 Tsp Garlic Powder
1 15 oz Can White Beans/Great Northern Beans (Drained)
1 Cup Frozen Corn
1 Cup Frozen Peas
1 Cup Celery
1 and 1/2 Cups of Carrots
1/2 Cup Diced Onions
1 Cup Kodiak Pancake Mix

Directions:
Throw all ingredients except for "Corn, White Beans, and Kodiak Mix)
Open the white beans and drain.
Use a magic bullet, mixer or blender
Pour entire can of beans in your blender
Mix into a creamy consistency - (If the mixture is too thick add a few tablespoons of water and mix until smooth)
Pour entire mixture into the pot
Add 2 cups of water and mix well
Cover and bring to a boil
Throw in the cup of corn and turn down to simmer (about 15 minutes or when a fork goes right through the carrots )

Dumplings
Pour 1 Cup of Kodiak Pancake mix
Add 3/4 Cup of Water and mix them well

Turn Soup up to Medium/High
Once the Soup is boiling start scooping our "protein" Dumplings on top of the soup (don't worry if they are all mixed up and cover the entire top of soup
Boil covered  for 15 minutes
Break apart and mix soup to make the dumplings spread out
Makes 9 Cups of Soup
