Fiesta Flat Bean Tacos! Quick & Easy Recipe!!



Ingredients:
1 Package Ortega Fiesta Flats (Walmart) Will need 3 shells
1/2 Cup Old El Paso Refried Beans
1/2 Cup Chunky Salsa
2 TBSP Sour Cream
2 Slices of Ultra Thin Sargento Colby Jack Cheese
1 Cup Shredded Lettuce

Directions
Preheat oven to 350
Bake Fiesta Flats for 3 to 4 minutes (Until Lightly Brown)
Mix the Salsa and Re-fried Beans and heat in microwave for about a minute and 5 Seconds
Fill Shells with Bean mixture and top with Cheese
Put back into the oven for about 2 to 3 minutes until cheese is melted
Top with Lettuce & Sour Cream
Serve!
3 Points plus per Taco Shell!

Weight Watcher Friendly HUGE Veggie Omelet! 3 Points Plus!


Ingredients:
1/4 Cup Fat Free Ricotta
1/2 Cup Fresh Diced Tomatoes
1/2 Cup Fresh Diced Broccoli
Eggbeaters 8 ounces
Black Pepper, Salt & Garlic Powder to taste

Directions:
Start by heating a medium pan sprayed with Pam or other spray
Pour in your egg beaters and let cook until almost set
Throw in your seasonings and the ricotta, broccoli and tomatoes
Fold the omelet over 
Carefully flip your omelet over and let cook until set
Serve!
The entire omelet is HUGE and only 3 points plus!

Let's REFOCUS and get prepared to LOOK and FEEL FABULOUS this Holiday Season!

     Believe it or not the Holidays are right around the corner! 
  Let's plan to look and Feel FABULOUS this Holiday Season!


    Have you ever received an invitation to a Holiday Party and immediately you thought "Oh no... I wish I had started losing weight months ago!!" This has happened to me so many times I can't even count.  

   In the past I would either find something that "fit" even if I didn't like it and suffered through the party feeling gross and fat or I just wouldn't go at all. 
     
    With that being said... it's time to refocus and let's NOT let that happen to us this year! YOU do have the ability to control this and celebrate the Holidays feeling amazing! 

Here's a few things to start with:

     -Start shopping online for that "little black dress" in a smaller size. (you can be in a smaller size or two by then)

     -Write a gift list of things you want in smaller sizes
          
     -Buy a pair of adorable pajamas (in a smaller size) for the night before to wear on the Holiday morning (Christmas Eve, Hanukkah etc) 

    - Take a "now" full body picture even if you've already lost weight and you can see your progress in the next few months. 

    - Let's plan on posting pictures looking fabulous this Holiday season! I will Post a date for us to do this close to the Holidays!

Weight Watchers 4 Points Plus - Meatless

Ingredients:
3 yellow summer squash
3 zucchini squash1 (15 oz.) Container Ricotta Cheese1 (23.8 oz.) jar Ragu Light Sauce, Tomato & Basil1 (14.5 oz.) can diced tomatoes, drained1 (12 oz.) package Smart Taste Elbow MacaroniItalian SeasoningGarlic saltPepper1/3 cup Weight Watchers Mexican Style grated cheeseDirections:Preheat oven to 350°.Cook macaroni according to package directions, drainthen return to pot.Cut squash in half lengthwise. Then slice intoapproximately 1/4” slices. In a large skillet sprayedwith Pam, cook the squash just until translucent.Add the squash, Ragu Sauce and can of drained tomatoes into the cooked macaroni. Stir to mix.Spray a 3 qt. (9x13) baking dish with Pam and spreadmixture evenly into it.Spread Ricotta cheese over the top.Sprinkle with Italian Seasoning, garlic salt, pepper andtop with the grated cheese.Bake for 45-50 minutes until nicely browned.Cut into 12 pieces for 4 Points Plus.

NEW RECIPE!!! Weight Watcher Friendly Cheesy Taco & Cabbage Casserole! 4 Points Plus for a HUGE Serving


Ingredients:
1 Pound 93% Ground Turkey
Pam (cooking Spray)
1 Cup Fat Free Sour Cream
1 Cup Diced Onions
1 Cup Diced Green Peppers
Medium to Large size Cabbage (diced)
1 Package of Taco Seasoning
1 Cup Chunky Salsa (any brand)
1/4 Cup Reduced Fat Sharp Cheddar Cheese
1/2 Cup Fat Free Cheese
9X13 Baking Dish

Directions:
Preheat your oven to 350 Degrees
In a Large Pot, Brown Ground Turkey
Throw in Green Pepper, Onion, Taco Seasoning & Salsa
Mix and let Simmer for about 2 minutes
Spray your 9X13 with Cooking Spray and add about 5 Cups of diced cabbage (the entire bottom of pan should be covered)
Now add about 1/2 of the Taco Mixture on top of the cabbage (spread evenly)
Add 1/2 Cup Sour Cream (Spread evenly)
Add 4 to 5 Cups of Cabbage
Now add the remainder of the Taco Mixture
Add another 1/2 Cup FF Sour Cream (Spread evenly)
**Take your Reduced fat cheese and fat free cheese and combine in a small bowl 
NOTE: Do NOT add cheese to casserole yet!
Cover casserole with aluminum foil and bake for 50 minutes
Remove aluminum Foil and discard
Sprinkle cheese evenly on top of the casserole and put back in the oven for 10 more minutes.
After 10 minutes (cheese should be melted) 
Remove from Oven
Cut into 8 Slices and Serve!
Each Slice is 4 Points Plus!

A few quick tips & Ideas to help you stay on track for the Holiday - Au...

VERY BERRY DUMP CAKE (Cobbler) - Weight Watcher Friendly Recipe!

Very Berry Cobbler (Dump Cake) Weight Watcher Friendly Recipe!


Ingredients:
1 Box Pillsbury Sugar Free Classic Yellow Cake Mix (you don't have to use sugar free)
2 Cups Diet Cherry 7 Up (any diet soda will work)
About 28 oz. Mixed berries (blueberries,strawberries, raspberries, black berries) (a little more or less is fine)

Directions : 
Preheat oven to 350
Spray the bottom of a 9X13 with Pam or other Cooking spray
Spread all the "frozen" fruit on the bottom of the pan (do not thaw)
Pour the entire box of Cake mix on top of the fruit (spread the cake mix try to cover as much fruit as possible)
Now Pour two cups of diet soda on top of the entire cake
Cover with aluminum foil and put in oven
Bake for 20 minutes with aluminum foil and then remove aluminum foil after 20 minutes. 
Let bake for 40 more minutes (until top is lightly brown)
Cut into 14 Slices (each slice is 4 Points Plus) 
**This is excellent warm with a little cool whip!

New Recipe! Weight Watcher Friendly Caramel Apple Crunch HUGE Parfait!


Ingredients:
1/2 Cup Diced Apples
1/2 Cup Fat Free Cool Whip
Ground Cinnamon (optional)
1 Container of Yoplait Greek 100 Calorie Apple Pie Yogurt (or comparable type)
15 Quaker Caramel Popped Rice Snacks

Directions:
Crush The Quaker Caramel rice snacks in a ziplock bag
Place a small amount of the Caramel Rice Cakes on to the bottom of a parfait cup or a bowl
Add a Few TBSP of Greek Yogurt
Add about 2 and /12 TBSP of apples
Add 2 TBSP FF Cool Whip
Now start another layer using the Quaker rice cakes
Keep layer just as you did the first time until all ingredients are used up
Sprinkle Ground Cinnamon on top
Serve!

Willpower - What is it and how do you build it up?

The Definition of Willpower is:


The ability of a person to exert his/her will over the inhibitions of their body or self

     Willpower doesn't come easy.. you have to build it up! It's like a muscle that needs to be pushed! Every single time you go make a good choice or refuse to eat something that you shouldn't that muscle gets stronger. 
      For example, when I was more than 100 pounds overweight I felt like I had no willpower.. Every time I went to an outing or a Dinner or closed the refrigerator and said "no I'm not eating that!!" my willpower grew. It TRULY works that way.
     I hear a lot of people say "I have no willpower." The thing is, you do!! You just have to work on it! Every single time you make a good choice you will get stronger and have the ability to lose weight successfully. Is it easy?? NO! but once you do it over and over it DOES become easy I promise!! When it's late at night and that ice cream sundae is calling you and your stomach is growling and you have that "overwhelming" feeling of "oh my God I have to eat" close that freezer and think of your body eating away at those pounds. Every time I've had that overwhelming feeling to eat and I refused I wake up in the morning feeling STRONGER and thinner! That is the best feeling!! Start building up your willpower! You can do it!!!

Today I was cleaning and decided to grab one of his old T-Shirts and put it on and it fit me like a dress :) Happy Lady here :)

ONE WEEK CHALLENGE RULES (PRINTABLE)



This Challenge is for ONE week only and it's going to get us back to the basics and for some "back on track". We are going to do it together and lose some weight!  The rules are below. You will want to start the challenge when your new weigh in week starts.  If you've gotten off track you can begin tomorrow! Please watch the Youtube Challenge Video for all Challenge Information!


Challenge Rules:

1. We are going through one week without eating any of our "Weekly" Points allowance so for one week lets forget they exist. (just one week)
2. Eat your amount of points you are given for the day and NO more... If you get 28 Points per day that is all you will eat each day and not go over. 
3. Water - Drink 6 to 8 glasses of water each day (one in the morning before eating anything)
4. Fruits - No More than 3 Fruits per day and only one of them should be a banana. 
5. Vegetables - Fill up on "Zero Point"Veggies at each meal, there is no limit, eat them until you are full (There is a full list of zero point vegetables on my blog)
6. Measure everything you eat! If it's meat it must be weighed, if its coffee creamer use a Tablespoon to measure the serving accurately. If you take a bite of something it must be counted! Use your online tracker, a journal or a piece of paper to track your daily points!
7. Try to get in your Healthy checks as much as possible (oils, milks etc)
8. Try to get in a little exercise each day even if it's just a 5 minute walk.

**Note: Since everyone has different weigh in days we will keep the challenge going longer than 1 week. Challenge will end Wednesday March 25th.

WW Friendly Chicken Salad Recipe!



Ingredients:
1 12.5 oz Can 98% Fat Free Chicken Breast 
1/4 Cup Light Mayo
1 and 1/2 Cups Celery
1/2 Cup Diced Onions
1 TBSP Dijon Mustard
Salt & Pepper to taste

Directions:
Drain Chicken Breast and put in a bowl and break apart with a fork
Add all ingredients and mix well
Serve! 
Each 1/2 Cup Serving is only 2 Points plus!
Enjoy on Bread, Wraps, make a chicken melt. So many possibilities!

How to make Quinoa!


Ingredients:
1 Cup Prewashed Quinoa (the brand shown is prewashed)
2 and 1/2 Cups of Reduced Sodium Chicken broth or water
Directions:
Take 1 Cup of dry Qunioa and 2 and 1/2 Cups of water or reduced sodium chicken broth and add to a medium sized pot

Bring liquid and Quinoa to a boil

Reduce heat to Low/Medium, Cover and let Simmer for 15 minutes

**Check every 5 minutes or so and mix to make sure nothing is sticking

After 15 minutes the  quinoa is finished! Make sure there is no remaining water or you will need to cook for a few more minutes. It should end up being dry like rice but almost translucent.
