New Recipe! Spinach & Cheese Tortellini Soup

Spinach & Cheese Tortellini Soup

Ingredients:

4 cups Chicken Broth
4 (8oz) Cans Tomato Sauce (or two 15oz cans
1 (28 oz) can of Diced Tomato
1 Small onion - Diced
3 Garlic cloves -diced
1 Cup Unsweetened almond milk
3 Cups Fresh chopped spinach (chop before measuring)
2 Cups of Frozen Cheese Tortellini (Market Fresh is 7 Points per Cup
1 Cup Water
2 TSP Italian Seasoning
2 TSP Garlic Powder
1/2 TSP Salt
1/2 TSP Pepper

Directions:
Pam or Other Spray to coat the bottom of the pot
Once pan is heated on low, cook garlic and onions until translucent
Now add everything above except for the Almond Milk and Spinach
Cover and Cook on Medium until Soup comes to a rolling boil
Now turn down Soup to Medium and add Almond Milk and Spinach (Lightly Stir)
Let simmer another 3 to 5 minutes (until the Spinach is wilted)
Make 14 Cups

Each Cup is only 1 Smart Point Each
For added flavor you can put a Teaspoon of Parmesan Cheese

WW Protein & Fiber Packed Pumpkin Muffins


2 Cups Kodiak Buttermilk Pancake Mix
1 Egg
1/4 Cup Applesauce
1 Can Pure Pumpkin
1 TSP Baking Soda
2 TSP Ground Cinnamon
2 TSP Pumpkin Pie Spice
3/4 Cup Splenda or other sweetener
1/4 Water
Preheat oven to 350 degrees
Use Cupcake holders or spray with Pam
Pour all ingredients into a medium size bowl & mix well
Scoop the mixture evenly into each muffin tin
Bake for 16 to 18 minutes (tops will be lightly brown)
Enjoy! Each Muffin is 2 WW Freestyle Points
