Breakfast Egg Cheese & Veggie Casserole! 2 Points Plus per huge slice!



One small container of Better n Eggs (or Egg Beaters)
1/3 Cup Bisquick Heart Smart 
2 Cups diced broccoli
1/2 Cup diced onion
1 Cup Fresh Diced tomatoes
3/4 Cup Fat Free Cheddar Cheese
2 TBSP 100% Grated Parmesan Cheese 
5 to 6 TBSP water
1 Tsp Tabasco Sauce
2 tsp Garlic powder
Salt & Pepper to taste

Directions
Preheat oven to 375 Degrees
In a small bowl mix the Bisquick with 5 to 6 TBSP water (the consistency should be very thin
Spray the bottom of a 9X13 and spread the Bisquick mixture evenly on the bottom (it should cover the entire bottom of the dish)
Next saute your broccoli & onions for 7 to 8 minutes (until veggies are slightly soft)
Now take a large bowl and add every ingredient except for the Parmesan Cheese and mix well
Pour the egg mixture evenly over the Bisquick
Bake for 30 minutes 
Remove from oven
Sprinkle 2 TBSP of Parmesan cheese evenly over the top of the casserole
Place casserole back into the oven for 20 to 25 minutes (the top should be slightly brown and solid 
Let Cool & cut into 8 HUGE Slices. Each slice is only 2 Points Plus!!
